Lemon-Dill Salmon Salad in Avocado Bowls
Ingredients
  • 4 pouches salmon, such as starkist salmon creations lemon-dill
  • 1/2 cup red bell pepper, diced
  • 1/4 cup cucumber, diced
  • 1/4 cup carrot, diced
  • 3 tablespoon red onion, finely chopped
  • 3 tablespoon sliced almonds, toasted
  • 2 tablespoon chopped parsley
  • 1 tablespoon capers, drained
  • 2 medium avocados, halved and pitted
  • 1/2 fresh lemon
Directions
  1. Combine the salmon, bell pepper, cucumber, carrot, onion, almonds, parsley and capers in a bowl.
  2. Rub the cut side of each avocado with the lemon half and set each on a serving plate. Spoon the salmon salad onto the avocado allowing any extra to cascade onto the plate.
