  • 4 large bulbs fennel, cut into ½-inch-thick slices, fronds reserved
  • juice of 1 lemon
  • 1/2 teaspoon lemon zest
  • 1 cup ground almonds
  • 1 teaspoon ground coriander
  • 1/4 teaspoon sea salt
  1. Preheat the oven to 375 degrees.
  2. Lay the fennel fronds in a large baking dish lined with foil and top with the fennel bulb pieces. Top with the lemon juice, zest, almonds, coriander, and sea salt. Bake until golden brown, about 25-30 minutes. Remove from the oven and set aside to cool for 2 minutes before serving.
