Avocado toast is one of the most popular dishes around and can be made in many different ways. This recipe is easy to make, filling, healthy, and holds many different flavors and textures to keep every bite interesting.

Ingredients

  • 1 Avocado
  • 1 Teaspoon Lemon juice
  • Slices Whole wheat sourdough bread
  • Handful Cherry tomatoes
  • Basil
  • Pepper flakes
  • 1 Teaspoon Olive oil
  • 1-2 Sundried tomatoes
  • Optional Pepitas and/or vegan Parmesan cheese

Directions

Slice 1 to 2 pieces of the whole-wheat sourdough bread and toast. While the bread toasts, in a bowl, mash the avocado with lemon juice, olive oil, and salt. Cut the cherry tomatoes in half, sundried tomatoes into tiny pieces, and the fresh basil into strips. Spread the avocado mash onto the bread slices and add the cherry tomatoes, sundried tomatoes, basil, and pepper flakes. Add any additional toppings if desired, my favorites are pepita seeds and vegan Parmesan cheese!
