Quinoa Bites

2 Cups Cooked Quinoa
1 Egg
1 Cup Shredded Carrot
2 Cloves Garlic, minced
2 Tbsp Fresh Basil, chopped
1/2 Cup Parmesan Cheese
1 Tbsp Flour
Salt and Pepper

Preheat oven to 350 degrees. Combine all ingredients together in a large bowl until thoroughly combined. Grease a mini muffin pan and fill to the top with the quinoa mixture. Bake for 15 to 20 minutes.

Stock up on quinoa and have it available for the days you are tired of rice or pasta. It's a great substitute for rice, beans, cereal, bulgar, or couscous.

Quinoa Cooking Tip

The general rule is to add one part quinoa to two parts liquid in a saucepan. One cup of quinoa will take about 15 minutes.
