I could eat peaches in just about every incarnation. Fresh peaches with cream, peach muffins — you name it and I will eat it. Something else I love and eat with abandon is blue cheese. So this "salad" is a celebration of both those flavors and how well they work together. It is best served as a sweet snack or as a semi-healthy topping or garnish for a dessert. No matter how much I make, there never seems to be enough!
In a small bowl, combine the peaches and Port wine. Let the mixture sit and combine. Meanwhile, crumble the blue cheese into small pieces (it's a strong flavor, so breaking the cheese up will avoid a too intense bite) and add to the peach mixture. Fold all components together.
Just before serving, add your slivered almonds on top and give it a quick mix.
