Floyd Cardoz Will Open Restaurant In Mumbai By End Of Year

Floyd Cardoz, the New York chef who serves as the executive chef of the newly-opened White Street (previously North End Grill and Tabla), will open his long-awaited restaurant in India by the end of 2014, Cardoz recently told Man's World India.

Chef Thomas Zacharias will serve as the executive chef of the restaurant, named Bombay Canteen, but Cardoz promises that "The food's going to be my menu. It will have my stamp on it."

Following Cardoz's decision to leave North End Grill earlier this year, Cardoz promised that he would "explore projects in India," and later hinted toward a "Tabla-like" restaurant in the future.

Though Cardoz will continue in his role as the executive chef of White Street, he told Man's World India that he would be traveling to India often and wanted to infuse a sense of innovation that feels has been missing in Indian cuisine of late. If I move the needle even five per cent, I'll be happy," said Cardoz.

As for menu details, the chef only said, "All I can tell you is that it's going to celebrate all things Indian."
