Chef Vic Casanova And Seth Glassman Launch Pistola In LA

Pistola, chef Vic Casanova and Seth Glassman's newest L.A. restaurant, opened recently on West Third Street. The modern Italian steakhouse features classic dishes elevated with a modern spin.

Chef Casanova was introduced to the city's dining scene as the opening chef at Culina. In 2011, he opened Gusto, an intimate 35-seat Italian restaurant on West Third.

Once home to the famous AOC, the newly-renovated, elegant-yet-comfortable space was inspired by Manhattan's Little Italy, and houses 120 seats within a split level, contemporary design. It's both modern and old school, with white tablecloths, high ceilings, an open floor plan, comfy banquettes, and a large marble bar. Upstairs guests can dine al fresco in the romantic patio with a retractable roof.

The menu focuses on comfort food classics including meatballs with Sunday gravy, rigatoni alla vodka, squid ink agnolotti, and baked ziti, some of which are served out of a custom wood-burning oven. Pistola also features a wide selection of steaks and accompanied by a large variety of sauces, and an extensive wine selection and a unique cocktail menu.
