3 Variations on 'Engagement Chicken' to Try This Valentine's Day
What is engagement chicken you ask? Rumors of a recipe so good it screamed, “lock this one down immediately,” started when a Glamour Magazine employee, Kathy Suder, made this chicken recipe developed by friend Kim Bonnell for her then-boyfriend. One taste of that perfectly roasted lemon chicken sent him straight to the jewelry store for an engagement ring.
But what makes this chicken recipe so special? Well — nothing. It’s roast chicken with lemon slices, salt, pepper, and fresh herbs — like thyme, rosemary, and sage — for garnish. The legend lives on with numerous (albeit unsubstantiated) reports that this chicken is sure to have you walking down the aisle in no time.
This Valentine’s Day, if you think your special someone needs a little extra coaxing to pop the big question, you can always try engagement chicken. Check out three recipes below that are sure to win over your S.O’s stomach, if not his or her heart.

Lemon Curd and Black Pepper Roasted Chicken
A perfectly roasted chicken is what many cooks dream of as quite possibly their last meal, and many more before then. It's Sunday dinner pared down to its bare essentials; just juicy, tender meat and crisp, crackling skin carved away by fork and knife. — Will Budiaman
