Chocolate Chip Cookies That Never Go Stale

Prep time: 15 minutes
Cook time: 5-7 minutes
Total time: 25 minutes

Servings: 3 dozen cookies


1 2/3 cup all purpose flour (not self rising)
1 cup caster sugar
1 cup light brown sugar
1 teaspoon baking soda
¾ teaspoon salt
1 teaspoon vanilla extract
2 sticks of softened unsalted butter
2 eggs
12 oz. Nestle chocolate chip morsels


1. Preheat oven to 350°F and get out two cookie sheets. Cover cookie sheets with parchment paper (otherwise the cookies will glue to the sheet!).

2. In a large mixing bowl, mix sugar, butter, vanilla and eggs until well-combined.

3. In another mixing bowl, combine flour, baking soda and salt.

4. Add the dry ingredients to the wet ingredients, and mix until just combined (be careful not to over mix it).

5. Fold in the chocolate chips.

6. Use a tablespoon of dough for one cookie and place on the sheet a good distance from each other. They melt and spread into very thin cookies, and you don't want to end up with one giant cookie.

7. Cook for 5 minutes or until they are uncooked in the middle, but brown on the edges. Take them out and allow to cool for 5 minutes.

8. Remove and place them on another parchment paper so you can cook the next batch.

9. After a few minutes (when they are room temperature) place them in a large ziploc bag and pop them in the freezer.

10. Enjoy the new experience of a frozen cookie. But beware: they are so delectable and thin, they disappear very quickly.
