Celebrity Chef Tour Heats Up Indiana
The Celebrity Chef Tour, a series of dinner events held at restaurants across America to benefit the James Beard Foundation, returns for another round of delectable dinner delights July 12 at the Joseph Decuis Restaurant in Roanoke, Ind.
Host chef Aaron Butts is teaming up with Tom Sheridan of LaSalle Grille, Greg Hardesty of Recess and Room Four, Neal Brown of The Libertine, and David and Krissy Tallent of Tallent for the one-night-only feast.
The evening begins with a sampling of appetizers, like mini Wagyu burgers with tomato jam, basil aioli, and gouger; summer vegetable frittata; and hog's head soppressata with salsa rossa and focaccia. Porchetta and onion grilled cheese sandwiches with Indiana peach bellinis and a duck rillette with Ritz crackers, mustard pickled sweet onion, and cornichons will also be served.
The dinner menu pairs gourmet dishes with complementary wines. Pairings include sweet corn tamales with slow-roasted sea trout and spiced pepitas paired with St Michelle Sauvignon Blanc, duck confit with chopped kale and peach salad paired with David Bynum Chardonnay, and a rock shrimp remoulade with fried zucchini, grilled corn, and cherry tomatoes paired with Domaine Serene Pinot Noir.
Still more dinner and wine options include crispy pig belly with celeriac hash cake, chilled tomato soup, and parsnip chips with tastings of Rodney Strong Symmetry Meritas, and grilled Wagyu rib-eye with charred eggplant purée, sweet corn summer squash hash, and bone marrow bordelaise will accompany Rodney Strong Rockaway Cabernet.
