Aromatics. Roasting a whole chicken is one of the easiest ways to an amazing dinner. Go one step further and stuff the cavity with herbs, citrus, and garlic. Alternatively, gently stuff thin slices of lemon or garlic between the skin and thighs or breasts for the same effect on a smaller scale.
Bacon. Bacon makes everything better, and chicken is no exception. The fat in bacon adds flavor to lower-fat chicken.
Mayo. Mayonnaise keeps chicken from drying out while it roasts.
Pesto. Whip up a batch of pesto and stuff it between the skin and meat of chicken thighs before grilling, roasting, or searing on a stove top. Although this is a super easy addition, the chicken will look (and taste) like you spent hours on it.
Tapenade. Dried plums balance out super savory olive tapenade in this Mediterranean-flavored dish.
