Peanut and Chocolate Clusters
These peanut and chocolate clusters are chocolatey and chewy — just what you need during the holidays. This recipe can take the place of chocolate chip cookies; set these out for Santa instead and he'll be sure to leave an extra present.
Ingredients: One half cup of semi-sweet chocolate chips, one half teaspoon coconut oil, and one half cup of chopped peanuts.
Directions: Melt the chocolate chips and oil in a microwave safe bowl for one minute or until the chocolate has melted. Stir the peanuts into the chocolate and drop spoonfuls of chocolate onto parchment paper. Let the clusters set in the refrigerator for about 15 minutes and enjoy.
If you want something with a more festive flavor, then you can omit the peanuts and add in a tablespoon of pumpkin pie spice, gingerbread, or peppermint extract.
