These days there's a trend toward making everything mini, and cupcakes seem to be the perfect vehicle for that.
Bob Blumer, who brought us the wacky way to cook salmon in your dishwasher, now teaches us how to make savory cupcakes, topped with a mashed potato "frosting." While you can adapt any favorite meatloaf recipe to cupcakes, Blumer shows how to make salmon cupcakes with dill mashed potatoes, plus lamb cupcakes (made with braised lamb shanks) and a beet potato topping (which is, fittingly, bright pink).
