Originally a native of Michigan, Jamie opened his first restaurant in Chicago, The Pepper Lounge, in 1994. His second, Technicolor Kitchen, in 1999 was noted as one of the “10 best new restaurants of the year” by the Chicago Tribune. In 2002 he moved to Portland and waited tables part time while teaching snowboarding on Mt. Hood. In December of 2004 he started construction on Gilt Club, doing most of the work himself. Known as the place where the chefs eat, Gilt recently celebrated it's 5th anniversary partially by staying involved with the community. In addition to the volunteer work Jamie does he is also a board member for the Pearl District Business Association, a representative on the Portland Development Commissions- River District Urban Renewal Advisory Committee and through the business, in addition to numerous donations and fundraisers, he's created a special night monthly that is unique to us in which we donate 30% of our food sales to Basic Rights Oregon to help spread equality across the state.
