Ingredients
  • 1 1/2 pound ground turkey
  • 1 large egg
  • 1 clove garlic, minced
  • 2 tablespoon chopped fresh parsley or 1 teaspoon of simply organic dried parsley
  • 1 teaspoon simply organic dried basil
  • 1 teaspoon simply organic dried oregano
  • 1/4 teaspoon simply organic crushed red pepper
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoon almond meal
  • 2 tablespoon olive oil
  • 1 tablespoon unsalted organic butter
  • 2 tablespoon olive oil
  • 1 small yellow onion, sliced
  • 1 medium red bell pepper, thinly sliced
  • 1 clove of garlic, chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 simply organic crushed red pepper flakes
  • 1 teaspoon simply organic dried parsley
  • 1 teaspoon simply organic dried basil
  • 1 teaspoon simply organic dried oregano
  • 2 cup fresh green beans, trimmed, cut in half
  • 1 teaspoon coconut flour
  • 1 (15 ounce) can diced tomatoes with its juices
  • 1 cup chicken broth
  • 8 ounce sliced white mushrooms
Directions
  1. Directions for Meatballs
  2. In a medium sized mixing bowl, mix together ground turkey, egg, parsley, basil, oregano , crushed red pepper, salt & pepper, garlic, and almond meal with a fork. (do not over mix). Take mixture and form into your desired size meatballs. Using your Le Creuset braising pan, set your stove top to medium high heat add 2 tbsp of olive oil and 1 tbsp of unsalted butter. Once butter is melted and starts to sizzle, add in your meatballs. Brown on all sides, Saute for about 10 minutes.

  4. Remove meatballs and put them on a plate. Add 2 tbsp of olive oil, then add your onions, peppers, salt & pepper, garlic, parsley, basil, crushed red pepper and oregano. Reduce temperature to medium heat. Saute for 5 minutes then add in green beans and red peppers. Let it saute for another 5 minutes. Add in tsp of coconut flour and 1 cup of chicken broth, stir together. Then add in diced tomatoes with it’s juices, stir again. Increase heat to bring up to a boil. Reduce to a simmer, add meatballs back into pan, cover and left finish cooking for another 15 minutes.
