400 grs grass fed ground beef cup crimini mushrooms
chopped cup yellow or white onions
finely chopped 5 cloves garlic
finely chopped 4 sprigs parsley
coarsely chopped 4 sprigs cilantro
coarsely chopped cup celery
chopped flax ground flax seeds soaked in water
1 tbsp chinese mint
finely chopped 1 tsp turmeric
½ tsp dried rosemary
½ tsp dried thyme
½ tsp oregano
½ tsp chili flakes
1 tbsp dijon mustard
2 tbsp tamari
1 tbsp olive oil
In a sauteing or cast iron pan heat the olive oil. Saute the garlic, onions and celery for about 3 minutes. Add the mushrooms and cook for another 2 minutes. You want to keep the celery crunchy. In a separate bowl, add all the rest of the ingredients and the sautéed veggies. Mix well. The soaked flax seeds will also help the ingredients to stick together, somewhat like and egg will do. What happens, is that you not only want to add the fiber and fatty acids of the flax, but for health purposes, you don't want to combine two different proteins like eggs and beef in the same dish.Place the mixed herbs, veggies and beef in a baking pan, and cook in the oven at 350 F for about 20 minutes, or until cooked but still juicy. Serve with some wilted spinach or radishoots like I did. SALUD!
