Thai Bird Chile Vinaigrette Recipe

A spicy thai dressing that's served atop raw hamachi in this recipe by chef Schneider. 

Ingredients

  • 4 Thai bird chiles, sliced thinly
  • 90 grams palm sugar
  • 2 cups fresh lemon juice
  • ½ cup fish sauce

Directions

Smash the chiles with the palm sugar until it starts to become soft, about 5 minutes. Whisk together the remaining ingredients.
