Snackshot Of The Day: Huevos Rancheros

Today's Snackshot is of huevos rancheros. This weekend is Cinco de Mayo, and the cruel calendar gods have scheduled it on a Sunday this year, which actually seems pretty nice when I think about what day it'll be next year... Monday (God help us). So when you wake up hungover from the 23 mint juleps you drank on Derby Day (it's always one too many, you know?), this is what you'll need: a whole bunch of Mexican food, topped with a fried egg. Likely, you'll go to a restaurant and enjoy a Bloody Maria alongside your meal, but if you're feeling ambitious, try the recipe used for this photo.
