A hearty main dish that is easy to cook. Perfect for a simple Christmas dinner, when served with Cream-Braised Belgian Endive and Wild Rice with Pomegranate.

Ingredients

1 tablespoon vegetable or grapeseed oil

1 3–4 pound chuck roast

Kosher salt

Freshly ground pepper

Directions

Preheat oven to 350 degrees. Heat oil in a large oven-proof skillet until very hot.

Season the meat well with salt and pepper. Add roast to hot pan; cook about 5 minutes per side or until browned on both sides. Transfer skillet to a oven; roast 30 minutes for medium-rare or until desired doneness.

Let rest 10 minutes before slicing.
