Crispy, oven baked zucchini sticks will make you forget about that French potato thing.
Zucchini Sticks
  • 1/2 cup seasoned breadcrumbs
  • 4 tablespoon freshly grated parmesan
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon parsely
  • 3 medium zucchini
  • 1/4 cup milk
  • 2 eggs
  • 1 cup marinara sauce, for dipping
  • ball park hot dog buns
  1. Preheat oven to 400 degrees F. Spray a cookie sheet with cooking spray. Place bread crumbs, cheeses, garlic powder, oregano, basil, and parsley in Ziploc bag; shake well to combine. Set aside.
  2. Cut each zucchini lengthwise into 8 pieces, then cut each piece in half.
  3. Beat egg and milk in a shallow bowl. Dip each piece of zucchini in egg mixture then bread crumb mixture.
  4. Repeat until all of the sticks are coated; place them on prepared cookie sheet. Bake for 10-15 minutes or until brown and tender. Serve with marinara sauce. Create veggie sandwiches by placing the prepared zucchini sticks and sauce into a Ball Park hot dog bun, cole slaw from above recipe, and top with melted cheese.
