Watermelon and Goat Cheese Salad

This is the perfect summer side dish or appetizer, that is sure to please

This salad, courtesy of  Ditch the Gluten, is a delicious pairing of sweet, crunchy watermelon and creamy, savory goat cheese.


  • 2 Cups watermelon, cubed
  • 1 Tablespoon olive oil
  • 1 small log of organic herbed goat cheese
  • Himalayan rock salt or course salt
  • 1/2 Cup pea tendrils


On a serving plate, stack pieces of watermelon. Sprinkle with crumbled goat cheese, olive oil, pea tendrils, and rock salt.

Enjoy with a glass of chilled rosé.
