These veggie fajitas are perfect for dinner parties because everyone can customize their own.Don't forget to saute your vegetables with fine sea salt for additional flavor.

Ingredients
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 lime, sliced into wedges
  • 1/2 white onion, sliced
  • 1 summer squash, sliced
  • 1 zucchini, sliced
  • 4 medium flour tortillas
  • shredded cheddar cheese
  • a dash of fine sea salt
  • olive oil
Directions
  1. In a saute pan cook each vegetale separately with a tablespoon of olive oil and a dash of fine sea salt.
  2. In another pan fry the tortillas lightly on each side.
  3. Top each fajita with cheese and a pinch of salt to taste.
  4. Serve with your choice of salsa.
