Two-Pepper Bruschetta Recipe


Two-Pepper Bruschetta

Colorful and crunchy, this bruschetta dish is a perfect party appetizer. 


  • 2 tablespoons sweet yellow pepper, chopped
  • 2 tablespoons green pepper, chopped
  • 2 tablespoons tomato, seeded and chopped
  • 1 tablespoon Italian salad dressing
  • 1 ¼ teaspoons green onion, chopped
  • ¾ teaspoon fresh basil, minced, or ¼ teaspoon dried basil
  • Two 1-inch-thick slices French bread
  • 2 teaspoons Parmesan cheese, grated


In a small bowl, toss the first 6 ingredients. Place the bread on an ungreased baking sheet and broil 4-6 inches from heat for 2-3 minutes. Turn the slices over and top with the pepper mixture. Sprinkle with Parmesan cheese and broil 2-3 minutes longer or until heated through.
