Tortilla Fruit Tarts
Ingredients
  • 6 mission organics® flour tortillas
  • 4 tablespoon unsalted butter, melted
  • 2 dashes of cinnamon
  • 4 cup prepared vanilla pudding, custard or pastry cream
  • fruit of choice
Directions
  1. Preheat your oven to 425 degrees F. Generously butter 3 heatproof ramekins and set them in a pan with high sides (I used a 9"x13" baking pan).
  2. Brush melted butter on one side of a tortilla. Sprinkle with cinnamon. Flip the tortilla over and repeat on the other side.
  3. Gently place the tortilla into your prepared ramekin. Fold or flute the tortilla to make it fit. This doesn't need to be perfect! Repeat with remaining tortillas.
  4. Bake in your preheated oven for 10-15 minutes or until the tortillas start to turn a golden brown. Remove the tortillas from the pan and allow to cool to room temperature. Once cooled, spoon pudding into the center of each tortilla "bowl" and top with your favorite fruit.
  5. Tortilla fruit tarts are best served the same day.
