Ingredients
  • 6 quarts heavy cream
  • 6 quarts milk
  • 2 quarts lobster stock
  • 1 quart roux
  • 5 pound swiss cheese
  • 5 pound cheddar cheese
  • 1 quart parmigiano-reggiano
  • 8 ounce macaroni
  • 4 ounce mac cream
  • 1 ounce cheese
  • breadcrumbs
Directions
  1. Bring to boil the heavy cream, milk, and lobster stock. Once boiling add the roux, remove from the fire and add the cheese. Let it cool down.
  2. Preheat oven to 350 degrees F.
  3. Cook the macaroni pasta for 12 minutes and mix with the mac cream. Add more cheese and breadcrumbs on top and finish in the oven until lightly brown.
