Ingredients

  • 1 Pound pumpkin, peeled and chopped
  • 1 small onion
  • 2 Tablespoons fresh thyme or rosemary
  • 3/4 Tablespoons butter or margarine
  • 4 Cups vegetable broth
  • 1/2 Cup white wine
  • 2 medium-sized potatoes, chopped

Directions

In a pot, heat onions and butter or margarine for a few minutes. Reduce to low heat and add white wine. Add remaining ingredients and let simmer and cook for at least 30 minutes until the pumpkin and sweet potatoes are soft and mushy. Puree mixture in a blender.
