Sweet Potato Hummus
Total time: 50 minutes
Ingredients
  • 1 1/2 pound sweet potatoes (about 3 large)
  • 1 cup drained, canned roasted red peppers
  • 1/3 cup fresh or refrigerated lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1 dash of cayenne pepper
  • chopped fresh parsley, for garnish
Directions
  1. Preheat oven to 400 degrees F.
  2. Prick sweet potatoes with fork.
  3. Place on oven rack.
  4. Bake until fork-tender, 35 to 45 minutes.
  5. Remove skins.
  6. Chill.
  7. In food processor, combine all ingredients except parsley.
  8. Process until smooth.
  9. Place hummus in serving dish.
  10. Sprinkle with parsley.
  11. Cover.
  12. Refrigerate until ready to serve.
