Stuffed Buttercup Squash
Try this stuffed buttercup squash recipe right at home. This recipe is stuffed with sweet caramelized apples; it makes an amazing side dish.

Ingredients
- 1 buttercup squash, cut in half
- 2 tablespoon olive oil
- 1 cup red apples
- 3 teaspoon brown sugar
- 3 teaspoon butter, softened
- 1 teaspoon lemon juice
Directions
- Preheat the oven to 350 degrees F.
- Cut your squash in half and remove the seeds and flesh and rub the inside of the squash with oil.
- Combine apples with sugar, butter, and lemon juice. Pour ½ cup into each squash half.
- Cover with foil and bake for 50 minutes or until squash is tender.
