Strawberry Tofu Cheesecake

Recipe Courtesy of Jane Ko and House FoodsAdd some extra protein and creaminess to your dessert by blending in some tofu into your classic cream cheese mixture. You won’t necessarily taste the tofu, but you’ll definitely feel the smooth and silky texture with each bite.

Ingredients
  • 1 1/2 cup graham cracker crumbs
  • 7 tablespoon coconut oil, melted
  • 1 package tofu, such as house foods premium tofu soft
  • 8 ounce cream cheese, softened
  • 1 cup strawberries
  • 1/2 cup sugar
  • strawberries, for garnish
Directions
  1. Preheat oven to 350 degrees.
  2. In a bowl, mix graham crackers and melted coconut oil until combined.
  3. Pour mixture into pie crust and bake in a 350 degrees oven for 10 minutes or until golden brown. Set aside to cool.
  4. Allow House Foods Soft Tofu to sit out while preparing crust. Drain excess liquid.
  5. In a food processor, blend soft tofu, strawberries, sugar, and cream cheese together. Pour filling into cooled piecrust.
  6. Chill in the refrigerator for at least 4 hours. Top with strawberries for garnish before serving.
