Strawberry Shortcake Icebox Cake

Like strawberry shortcake, but arguably better? This simple, no-bake, make-ahead cake is as easy as layering vanilla wafer cookies, fresh sliced strawberries, and whipped cream in a cake pan. After three to four layers of each ingredient, cover the cake with plastic wrap and refrigerate it for 24 hours.  Slice and enjoy!

Ingredients
  • 1 1/2 cup heavy whipping cream
  • 1 teaspoon vanilla extract, or vanilla paste
  • 1 1/2 tablespoon sugar
  • 2 cups sliced strawberries
  • 1 package vanilla wafers
Directions
  1. To make the whipped cream, place heavy cream, sugar and vanilla in an electric mixer until firm peaks form.
  2. To assemble:
  3. Place a single layer of wafer cookies at the bottom of a parchment lined pan; if necessary, break cookies to fill the gaps.
  4. Next, spread an even layer of the whipped cream over the cookies, then top sliced strawberries followed by another layer of cookies. Repeat as necessary for desired number of layers.
  5. Cover the top with plastic and chill, overnight, in the fridge.
  6. When ready, remove the cake from the fridge, decorate with more strawberries and serve.
