Strawberry And Heirloom Tomato Salad
This spring salad is sull of flavor and fresh seasonal treats

Ingredients
- 2 assorted heirloom yomatoes- cut into 1/6’s
- 6 strawberries- cut into ¼’s
- coach farm’s soft goat cheese- crumbled
- toasted walnuts
- watercress
- salt
- pepper
- 1/2 cup sherry vinegar
- 1 orange juiced
- 1 lemon juiced
- 1 tablespoon sugar
- 1/2 cup grapeseed oil
Directions
- In a another mixing bowl toss the tomatoes and strawberry’s with the vinaigrette, salt and pepper. On 2 plates arrange the tomatoes how you want it, and arrange the cheese and walnuts around and on top, Toss the watercress with a little vinaigrette and place on top of tomatoes. Serve and enjoy.
- In a small pot bring vinegar and citrus to a quick boil, shut off and dissolve sugar in liquid. Allow to cool down then in a mixing bowl whisk together with grapeseed oil. Season with a pinch of salt. Consistency will be a broken vinaigrette.
