From the brand-new spa-inspired mocktail program at Fig & Olive Melrose Place, bar manager Michael Loomis remixes fresh juices with seasonal ingredients — in this case, apples with Thai basil, lemon, and ginger. 
  • 4 ounce unfiltered apple juice
  • 1/2 ounce elderflower syrup
  • 1/2 ounce lime juice
  • 1 lemon wedge
  • 6 pieces thai basil
  • 1/2 bar spoon (a pinch) powdered ginger
  1. In a mixing glass, muddle Thai basil with lemon wedge. Add apple juice, elderflower syrup, lime juice, and powdered ginger. Shake vigorously for 6 seconds and strain over ice in a rocks glass. Garnish with a few sprigs of Thai basil and zest with lemon.
