This is a great recipe if you’re having friends over. It’s the perfect bite-sized snack and if you have leftovers they freeze well.

Ingredients

  • 1 Tablespoon olive oil
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 small onion, chopped
  • 1 can Spam, cut into 1-inch chunks
  • flour tortillas
  • 1 8-ounce bag of Cheddar cheese, shredded
  • Salsa, for serving

Directions

Preheat oven to 350 degrees F.

Heat the olive oil in a sauté pan on medium heat and cook the bell peppers, onion, and Spam until the vegetables have softened, about 7 minutes.

Layer one half of a tortilla with Spam and vegetable mixture, sprinkle with Cheddar cheese, and fold the tortilla in half so it is closed. Continue this until all 6 tortillas are filled.

Add all of the tortillas to a baking sheet and bake until the tortilla is crispy and the cheese has melted, about 10 minutes.

Cut tortillas in half and serve with salsa.
