Soby's Mini Lobster Rolls

Ingredients
- 1 pound lobster meat, cooked and chilled
- 1/2 cup mayonnaise
- 1/2 cup italian parsley, de-stemmed and chopped
- 2 cup fresh spinach
- juice of 1 lemon
- 6 3-inch hotdog buns
Directions
- Gingerly chop the lobster meat into bite-sized pieces.
- Mix all ingredients except the buns together in a bowl and season with salt to taste.
- Place about 3 ounces of lobster salad into each bun and serve.
