This recipe is a rich and delicious addition to your holiday meals.

Ingredients

  • 6 large sweet potatoes
  • 1 Cup butter
  • 1 Cup brown sugar
  • 1 Teaspoon cinnamon
  • 1/2 bag mini marshmallows

Directions

Preheat oven to 350 degrees F.

Peel and quarter the sweet potatoes. Boil them until soft.

Add the butter and mash together. Mix in brown sugar and cinnamon.

Put mixture in a casserole dish and cover with mini marshmallows. Bake for 30 minutes or until marshmallows are browned.

Look for vegetables that are firm and bright in color – avoid those that are wilted or have wrinkled skins, which are signs of age and damage.

Root vegetables should be cooked slowly by braising or boiling in order to cook the inside as well as the outside.
