Ingredients:
1.5 cup Rock Shrimp
.25 ea. Jalapeno
1 tbsp. Shallot
1 tbsp. Cilantro
1 ea. Lime Juice
4 tbsp. EVOO
6 piece Heirloom Ugly Tomato
.25 ea. Avocado
1 pinch Salt
1 pinch Course Black Pepper
5 ea. Grapefruit Segment Ruby Red
4 piece Chive
1 tsp. Prepared Horseradish
2 ea. French Bread Toast Point

1. Combine shrimp, jalapeno, shallot, cilantro, lime, tomato, horseradish, & evoo in mixing bowl and season with salt & pepper
2. Mark 1/4 of an avocado on grill and medium dice, gently fold into mixing bowl of ingredients
3. Pour into serving dish, place toast points
4. Remove all pith and skins from grapfruit, segment and cut segments in half, place centered on dish
5. Garnish with chive
