Ingredients
  • 1 package red lentil penne, cooked
  • 1/3 pound green beans
  • 1/3 pint grape tomatoes, halved
  • 2 tablespoon olive oil
  • 3 garlic cloves, shaved
  • 1 tablespoon parsley, chopped
  • salt and pepper, to taste
  • chile flakes, to taste
Directions
  1. Cook green beans in boiling salted water for 5 minutes. Shock in an ice bath to stop the cooking and set the color. Drain then slice into thirds.
  2. Heat oil in a sauté pan over medium-high heat. Add garlic and cook 1 minute. Add beans and tomatoes to warm through.
  3. Toss bean mixture with penne, parsley, salt and pepper, and chile flakes.
