- 1 large tomato, diced
- 1/4 large white or red onion, fine dice
- 1 (or so) garlic clove(s), fine dice
- 1/2 bunch cilantro, chopped
- Fresh lime juice
- 2 serrano, 1 hot jalepeno or 1/2 habenero pepper, fine dice
Chop, dice the vegetables
Combine the vegetables with the lime juice; there should be enough juice to coat everything
Rest, covered, at room temperature for at least an hour.
If there are leftovers, refrigerate for up to a week
Goes pretty well with most everything.
