Pea and Ricotta Spread
Pea and Ricotta Spread is a lovely springtime appetizer that is easy to make. The green peas and mint add a vibrant springtime freshness, and this spread is perfect served over crusty bread, or even with veggies.
- 12 Ounces Frozed peas, thawed, or fresh shelled peas
- 1 Garlic clove
- 2 Fresh mint leaves, more to taste
- 2 Teaspoons Lemon zest
- 1 Tablespoon Olive oil
- 1/4 Teaspoon Ground black pepper
- 1/2 Teaspoon Salt
- 1-1/2 Cup Ricotta cheese
Add all the ingredients to a food processor and blend so the mixture is combined, but slightly chunky.
Taste and adjust the seasoning as needed.
Serve as a spread for fresh crusty bread, toasted baguette slices, crackers, or with veggies.
