Ingredients
  • 12 ounce frozed peas, thawed, or fresh shelled peas
  • 1 garlic clove
  • 2 fresh mint leaves, more to taste
  • 2 teaspoon lemon zest
  • 1 tablespoon olive oil
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1-1/2 cup ricotta cheese
Directions
  1. Add all the ingredients to a food processor and blend so the mixture is combined, but slightly chunky. Taste and adjust the seasoning as needed. Serve as a spread for fresh crusty bread, toasted baguette slices, crackers, or with veggies.
