Enjoy five-minute salmon cooked in your microwave on top of a bed of greens, with a side of steamed spinach, or alongside a warm potato salad. This simple dish requires little more than a microwave-safe dish and plastic wrap to achieve flaky, delicious salmon.
In a small bowl, combine the mustard, garlic, soy sauce, olive oil, salt and pepper. Spread the mixture on top of the salmon filet in a microwave safe container. Top with lemon slices. Cover with plastic wrap, and microwave the filet for about 3 minutes and 30 seconds. Continue to microwave at 30-second intervals until the fish is cooked to your preference. Garnish with parsley and additional lemon slices.
