Simple And Easy Microwave Florentine Eggs And Bacon

Eggs Florentine
Ingredients
  • 1 cup cooked spinach
  • 1/3 cup sour cream
  • pinch nutmeg
  • 2 bacon rashers, finely chopped
  • 4 eggs
  • 2 teaspoon butter
Directions
  1. Purée spinach, sour cream, and nutmeg in a food processor until smooth. Divide mixture between 4 greased ramekins. Break an egg into each ramekin.
  2. Place bacon between 2 layers of absorbent paper towel. Cook on high in microwave for 1 ½ minutes.
  3. Sprinkle bacon over egg and dot with butter. Pierce egg yolks with a skewer and cook in microwave on high for 2 minutes. Remove from the microwave and let stand for a couple of minutes before serving.
