Simple and Easy Microwave Florentine Eggs and Bacon

Save yourself the hassle of making super fancy egg Florentine by making this super simple microwaveable version.

  • 1 Cup cooked spinach
  • 1/3 Cup sour cream
  • Pinch nutmeg
  • 2 bacon rashers, finely chopped
  • 4 eggs
  • 2 Teaspoons butter


Purée spinach, sour cream, and nutmeg in a food processor until smooth. Divide mixture between 4 greased ramekins. Break an egg into each ramekin.

Place bacon between 2 layers of absorbent paper towel. Cook on high in microwave for 1 ½ minutes.

Sprinkle bacon over egg and dot with butter. Pierce egg yolks with a skewer and cook in microwave on high for 2 minutes. Remove from the microwave and let stand for a couple of minutes before serving.
