- 1 Cup cooked spinach
- 1/3 Cup sour cream
- Pinch nutmeg
- 2 bacon rashers, finely chopped
- 4 eggs
- 2 Teaspoons butter
Purée spinach, sour cream, and nutmeg in a food processor until smooth. Divide mixture between 4 greased ramekins. Break an egg into each ramekin.
Place bacon between 2 layers of absorbent paper towel. Cook on high in microwave for 1 ½ minutes.
Sprinkle bacon over egg and dot with butter. Pierce egg yolks with a skewer and cook in microwave on high for 2 minutes. Remove from the microwave and let stand for a couple of minutes before serving.
