This recipe highlights some of summer's most finest fruits and vegetables while creating a taste that will keep your taste buds longing for summer to stay in the air. With the softness of peaches, refreshing cool of watermelon and crisp crunch of poblano peppers, this salsa is sure to satisfy the whole family on a hot summer afternoon. Reach in and grab an organic, non-GMO tortila chip, the melon salsa is going fast.
You can add additional fruits if you would like, such as, cantaloupe or honeydrew. You can also add an avocado or tomatoes, if you want more flavors. Let stand for 5-10 minutes before serving to let the flavors combine. You may refrigerate up to one day ahead of time and reserve leftovers up to one day prior, of serving.
- 2-3 peaches, diced
- 3 Cups watermelon, diced
- 3-4 pickling cucumbers, diced
- 1/2 Cup red onion, minced
- 2 garlic cloves, minced
- 1/4 Cup cilantro, minced
- 2 limes, zested
- 3-4 Tablespoons freshly sqeezed lime juice
- 2 Tablespoons extra virgin olive oil
- 1 bag Late July Lime Tortilla Chips
In a large serving bowl, gently combine the sliced peaches, watermelon, cucumbers, red onion, garlic, cliantro, lime zest, lime juice and olive oil. Let stand for 5-10 minutes before serving to let the flavors combine. Season to taste, adding more lime zest, lime juice and/or olive oil. Serve with Late July's Organic Lime Tortilla Chips or other non-GMO tortilla chips of your choice. Enjoy!
