Lobster Roll With Herbed Tofu Dressing

Ingredients
- 4 1-to 1 1/2 pound lobsters
- 1/3 package tofu, such as house foods soft tofu
- 1 lemon, juiced
- 1 teaspoon lemon zest
- 2 tablespoon fresh dill
- 2 tablespoon fresh parsley
- 2 tablespoon extra virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 large celery stalk, finely diced
- 4 hot dog buns, split
Directions
- Crack open the lobsters and remove the meat. Chop into even, bite-sized chunks.
- In a food processor, combine the soft tofu, lemon juice, garlic, dill and parsley. Pulse until smooth and creamy. Add the olive oil, salt and pepper and pulse again until combined.
- In a large bowl, combine the lobster meat, tofu dressing and celery. Add salt and pepper to taste, if needed. Divide among the toasted hot dog buns and serve.
