Ingredients

For the nut pesto:

  • 1/4 Cup chopped fresh parsley
  • 5 Tablespoons olive oil
  • 1 clove garlic
  • 1/2 Cup walnuts, chopped
  • 1/2 Cup cashew nuts, chopped

For the corn muffins:

  • 2 eggs
  • 1 Cup milk
  • 1 Cup flour
  • 1 1/3 Cup cornmeal
  • 4 Tablespoons softened butter
  • 3 Teaspoons baking powder
  • 1 Tablespoon sugar
  • Dash of salt
  • 1/2 Cup cheese, such as Jarlsberg® Cheese

Directions

For the nut pesto:

Blend all of the ingredients in a food processor and set aside.

For the corn muffins:

Preheat oven to 425 degrees F.

Whisk together eggs and milk. In a separate bowl, mix flour, cornmeal, butter, baking powder, sugar, and salt. Combine all ingredients and stir well. Spoon into paper muffin cups. Cut the Jarlsberg® cheese and press down into the center of the mixture in each muffin cup. Bake for 15 minutes.

Serve the muffins with the nut pesto and enjoy!
