Heirloom Watermelon Salad with Mint Vinaigrette
  • 1 1/2 cup lemon juice
  • lemon zest from one lemon
  • 1/4 cup honey
  • 2 1/2 cup extra virgin olive oil
  • salt, to taste
  • pepper, to taste
  • pinch of dry mint
  • 18 diced one-inch square watermelon pieces
  • 1/4 avocado, diced
  • pinch of chiffonaded mint
  • 1 ounce mint vinaigrette
  • 2 tablespoon crumbled feta
  • 2 tablespoon marcona almonds, chopped
  • 1 tablespoon pearl onions, sliced
  • 4 arugula leaves
  • salt, to taste
  • pepper, to taste
  1. Combine everything in a blender until well blended.
  2. For the watermelon, cut into 1-inch pieces and toss with diced avocado, mint, and vinaigrette. Plate the watermelon and avocado and garnish with the feta, nuts, onion, arugula, and salt and pepper to taste.
