Heirloom Watermelon Salad With Mint Vinaigrette

This summer, under the direction of executive chef Brian Massie, Hearthstone is offering a new menu of crafted house-made dishes including this seasonal, mouth-watering heirloom watermelon salad with Greek feta, avocado, red onion, and mint vinaigrette. This is a dish that completely encompasses summer's zesty and bold flavors.


For the mint vinaigrette:

  • 1 1/2 Cup lemon juice
  • Lemon zest from one lemon
  • 1/4 Cup honey
  • 2 1/2 Cups extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste
  • Pinch of dry mint

For the watermelon salad:

  • 18 diced one-inch square watermelon pieces
  • 1/4 avocado, diced
  • Pinch of chiffonaded mint
  • 1 Ounce mint vinaigrette
  • 2 Tablespoons crumbled feta
  • 2 Tablespoons marcona almonds, chopped
  • 1 Tablespoon pearl onions, sliced
  • 4 arugula leaves
  • Salt, to taste
  • Pepper, to taste


For the mint vinaigrette:

Combine everything in a blender until well blended.

For the watermelon salad:

For the watermelon, cut into 1-inch pieces and toss with diced avocado, mint, and vinaigrette. Plate the watermelon and avocado and garnish with the feta, nuts, onion, arugula, and salt and pepper to taste.
