A healthier take on the classic Elvis sandwich, this protein-packed peanut butter and banana sandwich is easy to make, tasty, and healthy.

Grease a skillet or griddle with cooking spray and place over medium heat.
Spread 1 tablespoon of peanut butter on each piece of bread. Scatter the banana on top of the peanut butter on 1 of the slices of bread. Place the other slice on top, peanut butter side down.
Place the sandwich in the skillet and cook for 2 minutes on each side, until golden brown. Serve immediately.
