Easy One Pan Gluten Free Chicken Piccata

It doesn’t get any easier than this one pan gluten-free chicken piccata recipe. Dinner is ready in under 20 minutes!
  • 1 pound chicken breasts, thinly sliced
  • 1/4 cup gluten free flour blend
  • 1/4 teaspoon salt
  • 4 tablespoon butter
  • 1 tablespoon olive oil
  • 1 large leek, thinly sliced
  • 1/4 cup capers, drained
  • 1/2 cup white wine
  • 2 teaspoon lemon juice
  1. INSTRUCTIONS 1) In a skillet, melt butter and olive oil over medium heat. 2) Add leeks and garlic. Saute for 5 minutes. 3) Put flour in a bowl and dredge chicken in flour. 4) Add chicken to the pan and cook until the chicken is almost done. (Turn chicken part way through the cooking so both sides are evenly cooked.) 5) Add wine, lemon juice, and capers. Turn down the heat and simmer. Flip the chicken to make sure both sides are coated. 6) Serve warm. (*Optional, sprinkle parmesan cheese over the top.)
