Lemon-basil mayonnaise and leftover turkey make this the perfect pressed sandwich! Try this recipe with chicken breast as well.
In a small mixing bowl, stir together the mayonnaise, basil, zest, and juice. Season with salt and pepper, to taste.
Brush 1 side of each slice of bread with olive oil. Spread the basil mayonnaise on the opposite side of each slice. Top 4 of the slices of bread (olive oil side down) with turkey. Sprinkle with salt and pepper, to taste. Add 2 slices of cheese over the turkey and top with the remaining 4 pieces of bread (olive oil side up). Heat a sandwich press and cook the sandwiches until golden and the cheese has melted.
